{The Food Files} A Sugar-Free Shamrock Shake

Have you seen them? The ads for McDonalds Shamrock Shakes. I die. No literally, it's one of my favorite items they make. My dilemma? Well, not only should I not eat a shake a day, I actually also shy away from processed sugar and eat fairly low carb. My solution? I try my best to find ways to make things that I love in a low-carb or sugar free option. And here's what I came up with and thought that I'd share with you, you know, in case you have a hankering for a shamrock shake these days too!

Ingredients
1 cup low-fat cottage cheese
1 cup low-fat milk (or water if you prefer)
3 cups ice cubes (or to desired thickness)
5-6 packets of Stevia (or your preferred sweetner to taste)
1/4 tsp peppermint extract (or to taste, it's strong)
1/4 tsp green food coloring
Whipped cream (opt)

Directions
Makes 2 servings.
Combine all ingredients and blend until smooth.
Top with real whipped cream (which is low in sugar, optional).

Variations
Protein Packed - add a scoop of protein powder for some added nutrients (may no longer be sugar-free based on the type you add)
Vanilla Dream - add a tablespoon of sugar-free vanilla instant pudding mix
Mint Chocolate Chip - add a tablespoon of diet hot chocolate mix (my favorite!)
