Ingredients
1 cup low-fat cottage cheese
1 cup low-fat milk (or water if you prefer)
3 cups ice cubes (or to desired thickness)
5-6 packets of Stevia (or your preferred sweetner to taste)
1/4 tsp peppermint extract (or to taste, it's strong)
1/4 tsp green food coloring
Whipped cream (opt)
Directions
Makes 2 servings.
Combine all ingredients and blend until smooth.
Top with real whipped cream (which is low in sugar, optional).
Variations
Protein Packed - add a scoop of protein powder for some added nutrients (may no longer be sugar-free based on the type you add)
Vanilla Dream - add a tablespoon of sugar-free vanilla instant pudding mix
Mint Chocolate Chip - add a tablespoon of diet hot chocolate mix (my favorite!)
Hope you enjoy!

How perfect for St. Patty's Day. I like to add cottage cheese to my protein shakes because it makes them creamier. BTW loving your blog. I am your newest follower. Feel free to visit mine as well :)
