ro-tel (diced tomatoes and green chilies)

Brown the ground beef and your choice of seasoning (I use salt and pepper). Drain the can of pinto beans and add to the beef along with the can of Ro-tel. Stir the mixture and let it cook until the juice from the tomatoes evaporates and all is warmed thoroughly.
Spread tortilla chips out on a baking sheet, cover with shredded cheese, and place under broiler on high and watch for the cheese to melt. If you like your nachos spicy, at this point you can add a jalapeno slice to each chip. Cover with meat and bean mixture. Serve with sour cream, salsa, and guacamole if you like.
See, easy! And it's a crowd pleaser. If you're feeding the little ones, try serving them up a bowl of the meat and beans (my kids love that). Or if you're trying to eat low carb, the meat and beans also make a tasty salad topper!

I had nachos tonight! Try this next time: In the crock pot: 1 can spicy chili beans, 1 chopped onion, 3-4 raw chicken breasts or turkey legs/thighs topped with 1 package taco seasoning and 1/2 cup salsa (or 1 chopped tomato). Cook all day on low. serve over chips & cheese with all your toppings... YUM!
